I have resisted joining facebook although I will probably join tomorrow, the Prorogue group is irresistible.

Toedancer that article was quite funny as it projected air travel in the future, funny in a horrific way as you can see them doing it.

I agree Toedancer and that is some scary shit they want to do, seems like along with it we are hearing  that flying is a privilege, as in we have no say in what we are subjected to.

It will reduce my willingness to fly to a once a year excursion and I will do that only because I have a grand-daughter that lives far away.   I have already curtailed my travel to the U.S. because of their actions, I had hoped to travel there again but Obama scares me more than Bush. LOL

Perhaps we need a No Scanners facebook group, I wonder how much more of this shit people will take in the name of security.  I don't see it as security as much as control.

Thanks for the recommendation for "District 9", I saw it last night.

I am still thinking about it, there were so many levels that it played on that I think I would like to see it again, I don't generally want to see movies again.

I loved "All That Jazz" so it looks like another recommendation.   :)

Not to forget the others which all sound good.

Sounds like your party dress was fun, I was kind of wishing for an chance to dress up but was too lazy to go to the party New Year's Eve and missed out on it.

I am watching Sicko and thinking France looks pretty good, I thought the statement that in France the government is afraid of the people but in the U.S. people are afraid of the government was interesting.

I have eggs sitting out to come to room temperature for today's experiment and am looking forward to some bacon with them too.

Thanks for the link to the high altitude baking skdadl, I lived in the mountains for a time and did lots of baking there.  I used the Joy of Cooking as a reference and it was very helpful.  The way I understand it is reduce heat, sugar, and baking powder/soda which are all factors that produce rising action and increase flour which is a stabilizing factor.  The point being to slow down the rising of the cake so that as it rises it bakes.

I remember  the first tray of brownies I made there, they rose up about four inches in the pan and then collapsed leaving a sludge on the bottom and a thick crackled crust, fortunately with whip cream they were still delicous.

Somehow I missed your link the first time skdadl but just looked at it now.   :lol:  Most of that is way beyond my math skills but I may try the two water bath method at some point in the future.  I do have a thermometer.

I will definitely keep at it, even with my less than perfect results I am still encouraged.

As for texture, I would call a perfectly poached egg with a soft yolk unctuous.  Yum.

My first attempt is  done and they were definitely the best poached eggs I've ever made but further work on my technique is required.  The next time I make them I will try with eggs at room temperature, even with the hole one of the eggs cracked.  They were not quite the neat little packages you described skdadl.  :applause:  Bravo to you for achieving that.

This is the kind of science I enjoy.

lagatta, thanks for the tip, I would like to enjoy the ready made goat yogurt but make my own as part of the SCD (Specific Carbohydrate Diet) because it requires it. It is cultured for twenty four hours which increases the probiotic content.   I've gotten the technique down to a pretty simple procedure but it would still be nice to be able to skip  it every now and then.  I make four litres at a time and that lasts me about ten days, generally depending on how much of the goat cheese I make.

I love to cook and new techniques are exciting for me, if there were eggs in my fridge I would be reporting back now.   :)

And please excuse the thread drift but thanks much to whoever it was who suggested dripping yogurt in a coffee filter some time back, I make my own goat yogurt and it makes for a delicious soft goat cheese done that way.

I agree with much of what you say skdadl, even so I am glad that it looks like McNally's Grant Park store will survive, it is my neighbourhood bookstore.  It does have comfortable places to sit and a great selection of books in addition to the shopping mall decor and overpriced knick knacks.
