Psst...don't tell anybody, but you can use instant crystals  :spy:

I did this at a friend's house, forgetting that he didn't consume any coffee hisself, but kept a jar of instant crystals for visitors.  

Can't remember how much I used as a sub for the 2T of actual coffee.  It really doesn't matter too much, as it's just for flavour.  Maybe try 1/2 tsp of crystals in 2 T hot water.

You can also test the consistency of candy using something called the cold water test.

A candy thermometer isn't all that expensive, though, and really, can you even put a price tag on CRUSHING THE COMPETITION? :)

What a groovy-looking recipe. I think I might make that. And Herr Magoo is right: the cold-water test will work, but it's not hard to find candy thermometers.

I wonder whether this guy   :JamesComey:   will forgive me for cooking from Martha Stewart. Gah. The moral dilemmas of modern life.  :wink:

(Unfortunately, the judges will have been well and thoroughly bribed by the time submissions are due, and I can't compete with that.  So this is likely to be a bit of a "Hail Mary" entry.)

hmmm.  in the guidelines at the top of the page they are talking about amounts of less than a teaspoon but in the recipies they are calling for as much as 1/4 ounce.  me thinks this should be clarified before baking and enjoying  8)

Merkins!  Even as I was buying the tools for the brittle, the judges were being bribed.  They just announced that they are only considering bona fide baked goods...
